Apple Pie
Ingredients

- 6 Granny Smith Apples
- Juice of ½ Lemon
- ⅓ C Sugar
- ½ C Brown Sugar
- 2 t Cinnamon
Crust
- 2½ C Flour
- 1 t Salt
- 2 t Sugar
- 1 C Margarine or Butter, cold
- ½ C Water, cold

Crust: combine dry.

Cut in cold margarine by hand to crumbly.

Slowly add cold water, mix till dough comes together (still crumby).

Divide in 2, wrap, fridge at least 2 hours (up to 5 days; longer = flakier).

Filling: peel and thinly slice apples.

Place in pot on medium heat with lemon juice, sugars and cinnamon. (Less sugar if apples are sweeter.) Cook until apples soft and covered in slightly thickened liquid.

Roll one dough half on floured parchment into 12" circle (⅛" thick).

Flip onto pie dish, press down and on sides.

Bake on 375 for 8 minutes.

Pour filling in.

Roll second dough into 12" circle, cut ½"-1" strands, lattice.

Optional: sprinkle turbinado sugar on top.

Bake on 375 for 45-55 minutes until dough golden and liquid thickened.
Note
Use fresh or freeze. Serve warm with ice cream.
