Blueberry Lemon Scones

Ingredients

Recipe

  • 2 C Flour
  • 3 T Sugar
  • 1 T Baking Powder
  • 3 T Butter, cold
  • 1½ C Blueberries
  • 1 T Lemon Zest
  • 2 Eggs
  • ⅓ C + 2 T Heavy Cream

Glaze

  • Confectioners Sugar
  • Lemon Juice
  • Lemon Zest

Instructions

    Combine flour, sugar, baking powder by spoon.

    Add cold butter in chunks; mix by hand till pea sized.

  3. 3

    Mix in blueberries and lemon zest.

  4. 4

    Mix ⅓ C heavy cream and eggs in a small bowl.

    Make a well in the dry mixture, add liquid; mix gently till it comes together.

    Shape into scones, brush with 2 T heavy cream, sprinkle with sugar.

    Bake on 400 for 18-22 minutes, until golden brown.

    Combine glaze ingredients.

    Cool scones a bit, then glaze.
