Blueberry Muffins

Yield: 8 Big

Ingredients

Recipe

  • ½ C Oil
  • 1¼ C Sugar
  • ¼ C Brown Sugar
  • 2 Eggs
  • 1 T Vanilla
  • 1¾ C Flour
  • 1 T Baking Powder
  • ½ t Baking Soda
  • ½ C + 2 T Almond Milk
  • 1½ C Blueberries

Crumbs

  • ½ C Flour
  • ½ t Cinnamon
  • ⅓ C Sugar
  • ¼ C Margarine or Oil

Glaze

  • Powdered Sugar
  • Blueberry Juice
  • Almond Milk

Instructions

    Crumbs: combine dry, add margarine, crumb.

    Chill.

    Muffin: combine oil and sugars, mix in eggs and vanilla.

    Mix in flour, baking powder, soda, then almond milk.

    Fold in blueberries.

  6. 6

    Line tins, fill, top with crumbs.

    Place on sheet.

    Bake on 400 for 20-30 minutes until clean.

    Combine glaze.

    Cool, then glaze.
