Ciabatta Rolls

Ingredients

  • 325 ml Water, warm
  • 3 g Dry Yeast
  • 50 ml Oil
  • 425 g High Gluten Flour
  • 10 g Salt

Instructions

    Combine wet ingredients, add dry, mix until shaggy dough (no kneading).

    Cover, sit 30 minutes.

  3. 3

    Wet hands, stretch and fold.

  4. 4

    Sit 30 more minutes, stretch and fold again.

  5. 5

    Rise 30-45 minutes.

  6. 6

    Transfer to well-floured surface, spread into rectangle.

  7. 7

    Cut into 8 pieces, transfer to lined sheet, sprinkle with flour.

    Rise while oven preheats.

  9. 9

    Bake on 400 for 15-18 minutes until golden.
