Jam Sandwich Cookies

Ingredients

  • 6 oz Margarine
  • ¾ C Sugar, heaping
  • 1-2 t Lemon Zest
  • 1 t Vanilla
  • 1 Egg
  • 1 Egg Yolk
  • 2¼ C Flour
  • Raspberry or Strawberry Jam
  • Powdered Sugar

Instructions

    Beat margarine, sugar, lemon zest and vanilla till combined.

    Beat in egg and egg yolk, then flour.

  3. 3

    Knead by hand for a minute to smooth.

  4. 4

    Chill 30 minutes.

    On floured surface, roll to ¼" thick, cut 36 cookies.

    Cut middle out of half with smaller cutter.

  7. 7

    Bake cut-outs too as mini sandwiches.

    Place on lined sheets.

    Bake on 325 for 10-12 minutes until lightly golden.

    Cool.

    Spread whole cookies with jam, top with cutout cookies.

    Dust with powdered sugar.
