Marble Muffins

Yield: 12 Jumbo

Ingredients

Recipe

  • ½ C Melted Coconut Oil or Margarine
  • ⅓ C Oil
  • 1 C Sugar
  • 2 Eggs
  • 2 t Vanilla
  • ⅓ C Sour Cream
  • 2½ C Flour
  • ½ C Cocoa
  • 1 T Baking Powder
  • ½ t Baking Soda
  • 1 C Milk
  • 1¼ C Mini Chocolate Chips

Crumbs

  • ¼ C Margarine or Oil
  • ⅓ C Sugar
  • ½ C Flour
  • 3 T Cocoa
  • ⅓ C Mini Chocolate Chips

Glaze

  • Dark Chocolate

Instructions

    Crumbs: combine dry, add margarine, crumb.

    Chill.

    Muffin: combine oils and sugar, mix in eggs and vanilla, then sour cream.

    Mix in 2 C flour, baking powder, soda.

  5. 5

    Mix in milk.

  6. 6

    Pour half batter into another bowl.

  7. 7

    In one half add remaining ½ C flour.

  8. 8

    In second half add ½ C cocoa.

  9. 9

    Divide chocolate chips, mix.

  10. 10

    Line tins, fill alternating batters.

    Top with crumbs.

  12. 12

    Bake on 375 for 20-25 minutes until clean.

    Melt dark chocolate while baking.

    Cool, then drizzle.

Note

Optional: half whole wheat flour and coconut sugar for healthier muffin.
