Mom's Cheesecake

Yield: 8" Round

Ingredients

Recipe

  • 2 Eggs, separated
  • ¼ C Sugar
  • 8 oz Cream Cheese, room temp
  • 2 T Cream Cheese, whipped
  • 2 T Yogurt
  • 1 t Vanilla
  • 1 T Flour

Crust

  • 26 Oreos
  • 2½ T Oil

  • Liquid Marble Chocolate

Instructions

    Crust: blend Oreos, mix with oil, press evenly on bottom.

  2. 2

    Bake on 325 for 12 minutes.

  3. 3

    Cake: beat egg whites stiff, add half the sugar, mix to combine.

  4. 4

    In medium bowl, beat cream cheese, rest of sugar and egg yolks smooth.

    Mix in whipped cream cheese, yogurt and vanilla, then flour.

    Pour over crust.

    With spoon, make thick lines of marble chocolate top to bottom.

    Drag skewer perpendicular for zebra stripes.

    Bake on 350 for 30-35 minutes — edges slightly golden, middle almost set.

    Turn off oven, open door, leave cake 20-30 minutes.

Note

Store in fridge. Freezes nicely.
