Montreal Bagels

Ingredients

Recipe

  • 1¼ C Water, warm
  • 2½ t Dry Yeast
  • 2 T Sugar
  • 1 Egg
  • 2 T Honey
  • 2 T Oil
  • 2-3 C High Gluten Flour
  • 1 C Flour
  • 1 t Salt
  • Sesame Seeds

Boil

  • 6 C Water
  • ¼ C Honey

Instructions

    Combine water, yeast and sugar, sit 10 minutes till active.

    Mix in egg, honey and oil, then flours and salt.

    Rest 5 minutes, knead till smooth.

  4. 4

    Cover, rise 1 hour.

    Divide into 12 balls, rest 15 minutes.

    Shape into bagels (rope, connect ends).

    Rest while bringing 6 C water to boil.

    Add ¼ C honey to boiling water.

    Lower flame, boil each bagel 45 seconds per side.

    Remove with slotted spoon, dip into sesame seeds, fully coat.

    6 per lined sheet.

    Bake on 450 for 16-22 minutes, flipping midway.

    If topping burns, lower to 425.

Freezes well.
