Pumpkin Coffee Cake Muffins

Yield: 12 Jumbo

Ingredients

Recipe

  • 1 C Sugar
  • 1 C Brown Sugar
  • ½ C Oil
  • ½ C Melted Coconut Oil or Oil
  • 15 oz Pumpkin Puree
  • 3 Eggs
  • 3 C Flour
  • 2 t Pumpkin Spice
  • 2 T Corn Starch
  • 1 t Baking Powder
  • 1 t Baking Soda

Crumbs

  • ½ C Flour
  • 1 t Pumpkin Spice
  • ¼ C Sugar
  • 2 T Brown Sugar
  • ¼ C Margarine or Oil

Filling

  • ⅔ C Brown Sugar
  • 1½ t Pumpkin Spice

Glaze

  • Powdered Sugar
  • Maple Syrup
  • Almond Milk

Instructions

    For crumbs: combine dry, add margarine, mix to crumb.

    Chill.

    For filling: mix sugar and spice.

    For muffin: combine first 5 wet/sugar, mix in eggs, add rest, mix just till combined.

    Line tins, fill halfway, add 2 t filling, cover with batter, top with crumbs.

    Place tins on sheet.

    Bake on 375 for 20-30 minutes until clean.

    Combine glaze.

    Cool muffins, then glaze.
